Green Day Seafood Pasta

    SW (on my own with help from friends on Minis)
    Another of my favourites where the original recipe called for double cream.

    But I've adapted it to be more SW friendly for a Green/EE day to be just 1 syn per serving on either day - plus 1 HexB per serving on a green day

    6 oz prawns (1.5 HexB)
    6 oz mussels (1.5 HexB)
    5 oz scallops, without shells (1 HexB)
    4 table spoons of dry white white (approx 4 syns)
    1 onion - finely chopped
    2 cloves garlic - crushed (or v. finely chopped)
    Few drops of Thai Fish Sauce (Nam Pla) - optional
    Fry Light
    2 tbsp Quark

    Wholewheat pasta - for 4

    Syns = 4, so 1 per person on green and EE
    HexBs = 4, so 1 per person on green


    Cook Pasta
    Cook the wholewheat pasta until al dente.
    As much pasta as you would normally eat but I do about 3 oz per person.

    To Make the Seafood Sauce
    Take the finely chopped onions and crushed garlic and saute slowly in the Fry Light until softened but NOT brown. Be careful not to burn. Takes about 15-20 minutes of gentle cooking!

    Add all the seafood and warm through for about 2-3 minutes.

    Add the white wine and bring to rapid boil to cook out the alcohol - about 2-3 minutes.

    Add the Thai Fish Sauce and stir through (optional).

    These quanties should make a nice coating sauce once the Quark is added later.

    BUT . . . Here comes the tricky bit! If it doesn't look like enough sauce you MAY have to add a bit of water. I just do this by eye but should not need more that 1 or 2 tbls of water.

    Put to one side if your pasta isn't ready yet.

    To Serve
    Once the pasta is ready put the seafood sauce back on a low light to warm up again. Take the pan OFF the heat and add the 2 tablespoons of quark. Make sure you are off the heat otherwise the quark will curdle.

    Add the pasta to the sauce and stir to coat evenly. Serve with a crisp salad.

    Easy Peasy


    If you don't like mussels or scallops, I have also made this with a salmon and prawns and it is just as good.

    The skinned salmon needs to be chopped into ½" - ¾" cubes.
    You can only use 5 oz of salmon though (2.5 HexB worth) so there isn't as much fish in the recipe.

    On an EE Day you can obviously put as much fish in as you like!!!!
