I like dipping carrot and cucumber batons in tzadziki made with 0% Greek yoghurt.
My yaya's recipe for tzadziki is:
500g Greek yoghurt
1/2 cucumber
2 cloves garlic
2 sprigs mint finely chopped
salt
Grate the cucumber into a sieve and sprinkle with salt. Leave to drain for 20 mins or so, then pick up the cucumber and squeeze out any remaining water. Add the cucumber to a mixing bowl with the yoghurt, grate in the garlic with a microplane (or, chop finely and then crush to a paste in a pestle & mortar with some salt) and add the mint. Stir well to combine and ideally allow to sit for 30 mins before tucking in. Keeps well covered in the fridge for a few days, it may separate but stirs back together well. And I mean well covered, else everything in the fridge will taste of garlic!!
Also good with a wholemeal pitta you've toasted and cut into inch wide strips, or as a dressing to liven up boiled potatoes.
