I really want to make chicken stew using chicken thighs but how do I remove the skin ? Do I take it off when they are cooked or before x

I would say before for stew as otherwise the fat from the skin will be going in your stew.....:)

it's only easy once you know how ;)
for drumsticks, do the same peeling thing ,trying to turn the skin inside out, then when it gets down to the knobbly ankle bit, take some kitchenroll or a cloth to hold the skin and have the meat in your left hand, skin in your right and pull. it comes off in one piece then.
