Spiced sweet potato and egg (now with pictures)

    Sweet potato (scrubbed)
    Chilli paste (can anyone confirm if it is syn free please?)
    1 spring onion sliced
    1 large egg
    Low fat cheddar to grate (or laughing cow broken up)

    Preheat the oven to 200C/Fan 180C/400F/Gas Mark 6. Prick the potato skin all over with a fork and rub salt into the skin. Bake for 40-50 mins or until tender or in the microwave for convenience.

    Wrap the base of the potato in foil. Cut a cross in the potato and mix the chilli paste and spring onion into the potato flesh. Make a hollow in the middle of the potato and carefully crack in the egg. Scatter over the cheese and return to the oven for a further 8-10mins or until the egg is baked to your liking. Serve with salad.

    just searching through all threads for sweet potato recipes, if anybody wonders why they're all coming back up at the top.

    this looks yummy, is it possible to cook the yolk through so that it isn't runny this way? xxx
