Spicy lentil and aubergine stew with a twist

I was peeling and chopping a couple of mangoes and wondered what to do with all the flesh stuck to the stone once I had taken off what flesh I could and then it came to me......i just made this and it tastes wonderful

One packet of Ainsley Harriots Lentil Dahl
Half medium aubergine diced
One small red onion diced
One small courgette diced
Two cloves of garlic chopped
6 cherry tomatoes halved
A sprinkle of chopped coriander
500 ml cold water
And then the mango.....

I sautéd the onion and garlic until softened in fry light
Then I added the aubergine and courgette and sautéed gently for 5 mins
In a medium sized saucepan add the sachets from the pack, all the vegetables including the tomatoes and then stirred in the water
I brought all this to the boil and simmered for five mins . I then took the stones from the two mangoes and squeezed the juice from both into the pan. Sprinkle with chopped coriander and leave to simmer until the vegetables are to your preference . Season and serve , delicious and spicy !
 
oh yeah I could happily yum that up.
