Another fishy week success!
I usually use a pack of cooked mixed seafood to make this, but couldn't find on Tesco.com so used Tesco frozen fruit de mers instead...
Spicy Seafood Spaghetti
Serves 2 - syn free on Extra Easy
Ingredients
150g spaghetti
1 shallot - finely chopped
2 garlic cloves - crushed
Half a red chilli chopped, or chilli flakes to taste
1/3 bottle passatta (or a tin of tomatoes)
Pinch of splenda
Balsamic vinegar
Salt & pepper
Couple of handfuls mixed seafood - defrosted
Chopped parsley
Lemon
Method
Cook the spaghetti as per the instructions on the packet.
Saute the shallot, garlic and chilli in some fry light for a few minutes.
Add the passatta along with some seasoning, splenda and balsamic vinegar to taste.
Allow to reduce for a few minutes, then add the seafood. Add some of the spaghetti cooking water if the sauce is a bit dry.
Drain off the spaghetti and toss in the sauce.
Divide onto 2 dishes and squeeze on some lemon juice and sprinkle with chopped parsley.
