Spinich and tomato tagliatelle.....LOVELY quick lunch!!

    Just wanted to share a really quick and tasty recipie me and my sis had this for lunch today. Free on green and extra easy!!

    Serves 2
    300g tagliatelle pasta
    Tin chopped tomatoes
    One large clove of garlic chopped
    Half a red chilli chopped
    2 large handfulls of spinich
    2 tablespoons of fresh basil chopped
    1 desertspoon of sweetner
    1 tablespoon balsamic vinegar
    Salt and pepper

    -Cook the pasta according to packet
    -Whilst this is cooking gently fry the chilli and garlic to soften but not brown.
    -Add the tin tomatoes and simmer to reduce down.
    -Add the balsamic vinegar, sweetner and salt and pepper.
    -When the pasta is cooked drain and add to the tomatoes with the spinich and basil and stir together to wilt the spinich.

    You could also grate over some parmesan (HEa or sins) or even add some lean bacon (still EE).
