Hi there! New to calorie counting so am starting this recipe thread to share anything nice I've made. Today I made a really simple but delicious cauliflower soup. Filling too! Serves 4 and works out at approx. 60 cals per serving. Recipe doesn't sound very exciting and my picture doesn't donut justice either, but it really is delicious. (From skinnytaste.com)
CAULIFLOWER SOUP
1 head cauliflower, chopped
Half a large onion, chopped
2 chicken stock cubes
4-5 cups water
Salt and pepper to taste
Throw everything in a pot, bring to the boil. Lower to a simmer for 20-25 mins. Blitz with a blender. Enjoy!
(I had to use vegetable stock cubes as I was out of chicken, and it was still delicious)
