Stuffed Peppers

I love eating stuffed peppers for SW lunches but usually just stuff them with cous cous or savoury rice and topped with a little cheese. Does anybody have any good ideas for different fillings?

im having a guess but could you have it with scrambled egg only thinking this as you put red pepper in SW quiche and the egg is 'scrambled' just a suggestion but might sound wrong: i havent actually tried it !

you've gave me an idea for lunch anyway never thought of stuffed peppers

I make quorn bolognaise & then put that in the pepper with cheese on top - very yummy x

I have stuffed peppers with lentil dahl, bolognaise, Chilli, anything tomato based and have a hex of cheese on it. Very yummy.
