Stuffed Peppers

Adapted the recipe for Smothered chicken

Serves 3 (with left overs) Free if using cheese as healthy extra a


450g diced chicken
1 red onion chopped
1 white onion chopped
5/6 mushrooms thickly sliced
1 yellow pepper
225g (uncooked weight) rice
1 tin chopped toms
400g passata
1 tsp oregano
1 tsp garlic granules
1 tbls paprika
1 tbls smoked paprika
1 tsp hot chilli powder/lazy chilli
3 red peppers cut in half and deseeded
grated cheese (optional extra)

Method

Chop onion, yellow pepper mushrooms. Add to a frying pan sprayed with frylight and sweat off till soft add spices and salt to taste and fry for a min to release the spice. Add chicken and fry for a few mins to coat the chicken. Add chopped toms and passata cover and cook for 15-20mins. In the mean time boil the rice and in a large pan add peppers bring to the boil and simmer fo 5 mins drain and leave to cool alittle. Once the rice is cooked drain and add this to the chicken mixture. Once everything is combined spoon into the peppers. Cover lightly with foil and place in the oven 180 for 15mins remove foil cook for a further 15mins towards to end sprinkle with grated cheese if having. I served this with a huge green salad. I added quite alot of paprika but this needs to be adapted for your own individual preference, i didnt think it was too spicy.
