I think unprocessed meat is things that haven't really been altered much or added to since coming from the animal e.g chicken breasts, steak. Processed meats are things like burgers and sausages which have gone through a 'process' and had things added in.
The unprocessed stuff is free on EE & red, and processed usually has a syn value, like sausages. The mince which though has been altered, if its less than 5% fat, is free (since it doesn't usually have anything added.
