SW blueberry magic muffin pancakes ;o)

I just made a batch of the magic pancakes with added halved blueberries and sprayed a silicon muffin tray with frylight and baked them in the oven for 20 mins and they came out a treat! Going to take some to work in the morning in my pack up!

Just thought i'd share with you as they are so much easier to make than the flat pancakes! blueberrypancakes.jpg

I used 30 g porridge oats mixed with one muller light yoghurt i find bannana or raspberry are my fave's! Then cover and leave in fridge over night! (you don't have to leave over night an hour or so is sufficient) then in the morning add handful of blueberries and dessert spoon of splenda sugar and 2 whisked eggs :)
 
Oh, the sound easy...
Even I think I could do that...lol

Ooh sound lovely but remember the blueberries would have to be synned as they are cooked x
 
Ooo they look yummy, did they cook through ok? when i have made the batter into pancakes they were a little soggy in the middle x
 
I had my oven on about 160 degrees just until they rose and turned slightly golden and seemed cooked in the centre x
 
must be fate, i picked up a huge punnet of blueberrys at morrisons for £2.00 yesterday and have no idea what to use them for, but now i do!
