SW Scotch Eggs with pork mince recipe?

I'm sure I saw this somewhere but can't find it now. Really fancying Scotch Eggs so if anybody could post a recipe using pork mince, can't get low syn sausages here, I'd really appreciate it. More of an idea of what to put in with the mince really to make them really tasty! Thanks!
