SW Tomato and basil risotto

Just made this from the slimming world magazine (the latest issue) So yummy and I added some chicken just to get some more flavours.

Ingredients
Chicken cut into chunks
Onion, celery - thinly chopped
Garlic clove - crushed or chopped
Risotto rice
Chopped tomatoes
Veg stock
Salt and pepper
Basil leaves

Method
1. cut the chicken into chunks
In a pan spray fry light and cook the chicken till brown.
2. Meanwhile chop the onion, celery and garlic and add them to the plan. Cook this for 5 minutes.
3. Stir in the chopped tomatoes and cook for another 5 minutes.
4. Add the rice and half of your stock and simmer for 10 minutes and stir occasionally.
5. Add the remaining stock for another 5 minutes then remove from heat and add the basil leaves and stir through
6. Finally season to taste and enjoy :D

Use as much ingredients as you want depending how many your making for as I just made it for myself. Definitely going to make it again!!!
