Puddings syn free coffee cake

COFFEE AND ALMOND CAKE

Just making this at the mo, so hope it tastes scrummy!

1 HEXB for the whole cake, no syns!!!

42g All Bran
2 tsp instant coffee granules
sweetener (to taste)
3 eggs
almond flavouring

Pour All Bran into microwave-friendly mixing bowl, add a little hot water to soften. Stir in the water then add coffee.

Add a few drops of almond flavouring.

Next add sweetener (Splenda is good) until you like the sweetness.

Beat 3 eggs and add to the mixture.

Microwave on full for 7 min.

You could add a quark/coffee topping too, if you like!

Oh, that sounds really yum.
Please let us know how it turns out.
I really want to try it, and an icing with quark/sounds good too.
I would like to try it in the oven too as my microwave is a bit naff!

could you please let me know how it turns out on a scale of 1-10

(1=disgusting and a waste of good ingredients and 10=on par with the real thing!)

I will make this tomorrow if it's 7 or above!! haha

Ooh... maybe a 7? I make a lot of quick All Bran cakes in the microwave. Usually chocolate and I made a ginger cake last week.

None of them are really like the 'real thing' but they do tend to satisfy my sweet tooth and they're actually quite filling too.

The coffee one was quite yummy actually. A good mix of bitter coffee and sweetness too. I had mine with some sweetened natural yogurt.

Probably to make it better, you could cook it in the oven.

I'm doing a coffee one (well, 6 muffins) in the oven. I did add a teaspoon of baking powder. (0.5 syn) Waiting to see how they turn out. I wanted to make chocolate ones, but came home from shopping to realise had used all the cocoa. Humph! Coffee should be nice though. Will let you know how oven turns out.

Just made this. A little odd, but good enough for cake cravings I suppose. I poured a highlights over the top of mine!
