Hi everyone :),

I have come across a pizza recipe on the internet using cauliflower as a base. It makes a nice thin crispy pizza crust. It's syn free on all plans ! I thought I'd share the recipe with you all . Would love to hear your feedback :D.

Cauliflower Crust Pizza
Syn Free on all 3 plans !

Ingredients:

1 cup cooked, riced cauliflower
45g shredded mozzarella cheese (HEA)
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
Frylight

Syn free Pizza sauce

TOPPINGS:
Mozzarella cheese, shredded
Other additional toppings of your choice


Directions:-

Syn Free Pizza Sauce
Throw a can of chopped tomatoes and some fresh crushed garlic into a saucepan with some salt to taste, black pepper and some dried basil and oregano – just for a bit more oomph. Let the mixture bubble away and reduce down a bit. This will be your pizza sauce to spread over the base.

Pizza
To rice your cauliflower, take 1 large head of cauliflower, remove the stems and leaves, and chop the florets into chunks. Add to a food processor and pulse just until it looks like rice. Alternatively, you can grate the cauliflower with a cheese grater. Place the riced cauliflower in a microwave safe bowl, add 1/4 cup water, and microwave for 6-8 minutes, stirring half-way through.

To make the pizza, preheat the oven to 230c. Line a baking tray with greaseproof paper and spray with frylight. In a medium bowl, combine the cauliflower, half of the mozzarella cheese mixture and egg together and stir until well incorporated. Add the oregano, garlic, and garlic salt. Transfer to the baking tray, and shape into a 9-inch circle. Spray the crust with frylight to help it brown in the oven. Bake at 230c for 15 minutes, until the crust is browned and cooked through the middle.

Remove the crust from the oven. The crust should look something like this :-

Now you can add your pizza sauce and toppings with the remainder cheese on top to your crust. Place under the top shelf of oven at high heat until the cheese is melted and bubbly.(About 3-4 minutes).


Allow the pizza to cool slightly, then cut into slices and serve.

Hi ev1 :),

I made this today with an Indian twist adding chicken tikka pieces with green chillies and coriander, it was yum ! I have tried the smash pizza but prefer the cauliflower crust version.

Thanks for posting this recipe- it looks delicious!!

I was wondering if the taste of cauliflower overwhelmed the overall flavour or was it as tasty as it looks??

I have to be honest, I really didn't enjoy it. I think if I was trying again, after googling other people's experiences, I'd really try and squeeze all the water out of the cauliflower after microwaving it and before making the base. I wouldn't try it again though - wasn't for me! The Tesco bread mix is still my fave :) xx

Hi :),

If you season the cauliflower rice well and add the shredded cheese before baking the base, this will reduce the cauliflower taste hopefully.

I'm glad you tried it out, your pictures look lovely, sure doesn't look like it tasted bad but I believe you because maybe its not for everyone. I would definitely say when heating the cauliflower it will release moisture and its better to release the water before proceeding so the base is dry, the eggs should be enough to bind it together with the cheese and hopefully the seasoning should take away the cauliflower taste. It might take a couple of goes before you get it how you want, but if the Tesco bread mix works for you - well at least your still going to enjoy a yummy pizza ! :D

You could always use lean meat for the base and top with lots of veggie items. I'm just off to get some thin turkey steaks from Asda to do just this with at the weekend (not quite so much super-free, but a lot less faffing). I do like the sound of the cauliflower one though.
 
I love the look of this, I had read about cauliflower bases before but this looks so delish, can't wait to try it :)

I have just been looking through my SW '30 minute meal' recipe book & there's a pizza called 'Skillet pizza' but it only shows the syn value for green days.... I can't see anything particularly bad, but do you think the pizza base will be free on EE?

The base is made of:
Boiled & then grated potatoes
1 egg
Salt/pepper
