Never gets tired of SW!
Hi guys, I just thought I'd tell you that I made the Thai Chicken and Veg curry from the Extra Easy cookbook and it was just lushious!!( even if I say so myself!! LOL!) My hubby loved it too!! You put chicken stock, reduced fat coconut milk and soy sauce into a pan and add to this crushed garlic, grated ginger, chopped lemongrass, curry powder and chopped fresh coriander. You then throw in bite sized pieces of chicken breast, sliced spring onions, sliced shitake mushrooms, chopped aubergine, finely chopped celery stick, sliced red pepper, carrot matchsticks (I also threw in chopped miniture corn on the cobs and a chopped red chilli) You bring it all up to the boil then simmer (says 8-10 mins, I gave it 1/2 hour) then add pak choi near the end of cooking but I used spinach instead! Serve with jasmine rice- Yummm!X
