Thai Red Curry

This is divine...

3 tbsp Thai red paste (I searched long and hard and found one that contains no sugar..it's just crushed spices)
1 can LIGHT coconut milk (strange..but the light is a lot less carbs than heavy!)
Chicken diced (or prawns etc)
Onion
Red pepper
Nam pla
Dash splenda

In medium pot fry onion and chopped pepper till tender but crisp..remove from pot

Add can of coconut milk to pot and heat gently
When just bubbling add in 3 tbsp paste and whisk well
Allow to boil then add in chicken
Keep on slow boil for about 30 mins (using chick)
At last min add a tbsp of nam pla and bout 1/2 tsp of splenda
Simmer for min and you're good to go :)))

Serve on a bed of egg fried 'rice' (recipe on next thread!)

Hi guys, I'm in Ireland and got the paste in one of our major grocery retailers, Superquinn.

The brand name is TFC (Thai food Company) n
Jthey are little jars (not your big normal ones) kind of like salt cellar size.

They have Thai red, massaman, pedang. I also got a korma paste that is sugar free.

They were in the ethnic foods aisle and I discovered them by reading every label of every product lol!!

They have carbs but they're all spice carbs and no naughties!

Really hope you can find same because having a curry has been a huge bonus for me!
 
Yummy - but can't see that they sell outside Ireland.

Not to worry, I'll google and see if I can make one from scratch.
