Red Day Thai steamed fish

    Hey guy, made a delicious meal tonight of Thai steamed fish.

    Serves 2

    2 fish fillets (i used Youngs frozen coley)
    3 baby pak choi - cut quarterly lengthways
    small piece of root ginger - peeled and chopped
    small red chilli - peeled and chopped
    small garlic clove - peeled and chopped
    juice and zest of a small lime.
    2 tbsp of soy sauce

    1. defrost the fish fillets in microwave for 4 mins
    2. lay out a piece of foil and put on the fish, ginger, chilli and lime zest
    3. add the lime juice and soy sauce
    4. lay the pak choi over the fish
    5. lightly close leaving a gap at the top and steam for 15 mins

    I had this with a side of rice because i am doing EE and it was lush! Hope you like it too :)
