Thai Vegetable Curry (250 calories plus rice)

Serves 2, takes 5 minutes to prep and 25 to cook

1 small red onion, chopped
1 garlic clove, crushed
1 tsp lemongrass, chopped
2cm piece of fresh ginger, chopped
2 tsp ground coriander
150g sweet potato, peeled and diced
1 tsp vegetable stock powder
1 small red chilli, sliced
1 yellow pepper, diced
200ml reduced fat coconut milk
fresh coriander

1. Dry fry the onion and garlic until soft, add the spices and sweet potato and cook for 2-3 minutes
2. Add the remaining ingredients and simmer for 20 minutes ish until the veg is all soft.
3. Stir in fresh coriander just before serving, add salt and pepper to your tastes, I generally don't add any

Serve with rice.
