Snacks Tomato, Pepper & Chilli Syn Free Soup (For those of you who like it spicy!)

This might not be a recipe for the pro soup makers out there but its one thats quick, simple, and delicious! Instead of roasting the veg quickly cook in frylight, simples! Might be too spicy for some, but for me its perfect syn free snacking food! ;)


1 Tin chopped tomatoes
1 500g Passata
2 Red Peppers
1 Yellow Pepper
2 Red chillis
2 cloves of garlic
15 ripe santini tomatoes
1 red onion
Fresh Basil
380ml Boiling Water
2 Oxo Vegetable Stock Cubers
Fry Light
Crused dried chillies

Hand blender

Step by Step

Crush garlic into a pot with a few sprays of fry light.
Chop chillies,
tomatoes, peppers, red onion and basil.
Add all vegetables to the pot...Cook for about 3/4 mins.
Add 1 tin of chopped tomatoes and 500g of passata.
Simmer for about 20 mins
Boil kettle for stock.
Remove from heat, Use handblender to blend all vegetables.
Add 380mls of stock.

Add basil to top to garnish and voilá! :D
