Attack Turkey Patties

Hi, I did this tonight from a recipe but had to adapt because I didn't have oatbran to add, having had my allowance today. Adjust amounts as you prefer.

160g Turkey Mince (this was all I had in)
1 Egg
Half a shallot chopped fine (this is to add taste, not as a veg)
Herbs and seasoning as prefered. I used sage and corriander.
Salt & Pepper

I'm not very good at using herbs because I'm never sure what herb is best with what meat etc.

  • Chop onion very finely.
  • Beat egg and add to onion and mix
  • Add Turkey to bowl along with a generous pinch of any herbs or seasonings you prefer.
  • Add S & P

Spray a couple of sprays of oil (or a drop and wipe) in a frying pan.

Put whole mixture into this and flatten with back of fish slice/spatula so its a thin pattie.
Fry till its golden brown on both sides.

I then made a mint and garlic yogurt dip and dipped pieces of the pattie in the dip to eat. Very yummy.

can you freeze these with the egg in them?

There is a wonderful book called "The Flavour Thesaurus" by Niki Segnit (Bloomsbury) its £18.99 so maybe on a gift list, but it is great for pairings. As well as the obvious lamb & mint, Pork and apple, fish and bacon it has wonderful combinations (water melon and chilli) as well as herbs etc.

When you deserve a treat and wine/chocs are out????
