Veg and salad

Hi all, here I am again with a question.

Vegetables, which are the lowest in carbs, cause truthfully I am struggling with meals.

The meat side are no problems but tonight I was planning on having chicken and leeks and a leek is 11g of carbs so I am a little confused on what to make a meal out of

Any ideas will help

I'm not doing Atkins - but I did follow the plan for a couple of years - I know that some veggies have been added in but from memory the veg with the lowest carb counts tend to be of the green leafy variety plus things like beansprouts, mushrooms, cauliflower, broccoli, swede etc.

If I wanted something substantial I would have swede or cauliflower to mash - both good as toppings for cottage pie etc - and of course when following Atkins you can add cheese for even more flavour.

I love savoy cabbage with pancetta cubes - yum yum.

Also for a nice change a stir-fry with beansprouts, pak choi, mushrooms, peppers etc.

Am sure there are some full lists somewhere.
