Here's another souper recipe for you. Tried it last night and it was really good. Again, it's short on protein, but you can easily add some chunks of meat in there to make it even heartier. Very filling, too.

Serves 4 (big portions)

1 onion, chopped finely
225g carrots, peeled and diced
3 celery sticks, sliced thinly
175g swede, chopped finely
1.2 litres vegetable or chicken stock
1 tblsp tomato purée
400g can chopped tomatoes
1 tblsp freshly chopped herbs (I used chives and basil)

Place onion, carrots, celery, swede, stock, tomato purée and chopped tomatoes in a large pan and bring to the boil.

Reduce the heat and simmer gently for 25 mins until the veg are very tender.

Season to taste and stir in the fresh herbs just before serving.
