Wacky Dukan Muffins

Been experimenting with muffin recipes and I borrowed this idea from a recipe called 'wacky chocolate cake' (which is delicious if you've never tried it).
Make the standard muffin mixture:

8 tbsp oat bran
4 tbsp wheat bran
sweetener to taste
3-4 whole eggs (I used 3 and it was plenty)
1 tub 0% yoghurt (120g)
flavouring & spices to taste

or whatever recipe you use but leave out the baking powder

Now, instead of adding baking powder, add baking soda (I really didn't measure, but probably about 1 tsp or a bit more - it's not a tolerated as it has no calories or carbs) and a splash of vinegar (also about a teaspoon or a bit more). DON'T WORRY, the muffins don't take on a vinegary taste at all, but the combination of baking soda and vinegar causes the batter to bubble and the muffins to rise much better than the baking powder so it saves on a tolerated ingredient (the baking powder) and saves you from having to beat the whites separately, which I for one can't stand doing :) You end up with a nice fluffy muffin that's cake-like in texture and slightly less dense (at least less dense than what I've been making).

Meant to also say this is for 12 muffins, so 3/day for 4 days
