Day out of date chicken wont kill ya (probably)
I'd bash out the chicken until it was thin then mix quark with grated cheese and a few herbs, wrap the chicken in ham and bake for 20-25 mins, serve with sauteed mushrooms/leeks

I'd fry-lite the leeks/ham mix the eggs with quark and season, if you have any potatoes peel and grate then squeeze the water out in a teatowel press the spuds into a baking tin and bake until crisp, put the leeks/ham/herbs into the baked potato then add the quark/eggs mixture top with grated cheese and bake until set, if you dont have any spuds just leave that part out

A bit late- but if your mushrooms are large enough you could stuff them with a leek, bacon and quark mixture and bake in the oven
