Free Sweet Chilli Sauce

I had a go at this today. I love sweet chilli sauce and decided to have a go at making my own.

I had a go at this today as I love spice & wanted a free dressing to put on my salad. I LOVE sweet chilli sauce, but at 1pp per tablespoon, I could easily pour 8-10 tablespoons over my dish!!

Measurements are approximations, at the end of the day, it's all down to personal taste.

1 red pepper
3 cloves garlic
3 chilli peppers
1 & 1/2 - 2 cups water,
1/4 cup white wine vinegar
3 tablespoons rice wine vinegar
Large handful coriander as I love the stuff

Blitz with a food processor or stick blender & put in a pan. Add sweetener, now this is the tricky part. As there is vinegar in it, you add enough sweetener for your own taste. I added about 6 tablepoons. Add 6 tablespoons fish sauce (1pp) freshly squeezed lime juice (I grated the zest & added that too to make it slightly more zingier.
Once boiled, reduce & let it simmer until it is reduced & thickens slightly. (i took it off the beat after 10-15 mins)
It made 1 & 1/2 jam jars. I will be taking some with me tomorrow for my lunch as I have made a prawn noodle salad & will pour sweet chilli sauce over it just before I eat it. Delish!!

Me too!!! I love chilli sauce & thought I would never have it again for as long as I'm following the plan, but I was determined to find a free version. I found 2 recipes on the internet & used some ideas from both. One wasn't cooked but had a raw taste if you know what I mean? So I chucked it into a pan & what a difference :-D i've posted a pic too to let you see what it looks like. The only ingredient that uses points is the fish sauce, at only 1pp for 1 & 1/2 jars, happy days x

Oh wow it looks soooo good!

I generally avoid fish sauce so its probably the one thing that I would leave out.

Im sooo going to make this ASAP!
I've been scrimping by on 1tbsp of it with salads and its just no use. Essence of sweet chilli but nothing close to what I LOVE!

You don't taste fish, it enhances the flavour. It's like adding a teaspoon of sugar to tomato based sauces, it doesn't taste sweet, it brings out the flavour.
As I said, it can be adapted to suit your taste, make it hotter, stronger flavoured, weaker, whatever.

Im allergic to shellfish and some fish like anchoves
cant find a fish sauce that doesnt have essence de kill lemai! Lol
I suppose i could try with light soy for the saltiness

I have my jars prepped and ready for the morning. Really looking forward to this now :)

Aww, I didn't realise. Yep soy would be a good substitute. Again, it's about adapting recipes to suit you. Enjoy :)
