    here you go...

    cajun chicken breasts

    basic ingredients:
    2 skinless chicken breasts, about 150g
    5 tbsp of natural bio yoghurt
    1 tbsp chopped fresh mint
    salt

    cajun marinade:

    2 tbsp of olive oil
    1 tbsp lemon juice
    1/2 tsp of cayenne pepper
    1/2 tsp paprika
    1/2 tsp ground cumin

    Method:


    1. to make the marinade, mix together the oil, lemon juice, cayenne pepper, paprika and cumin in a dish. season with salt.
    2. place the chicken breasts in a dish and spoon over the marinade. marinate for at least 1 hour in a fridge or leave over night
    3. mix together the yoghurt and mint, then season. set aside.
    4. heat the grill until very hot, then reduce the heat to medium and cook the chicken for 5-6 minutes each side until slightly blackened on the outside and cooked on the inside.
    5. serve with the mint yoghurt.


    serves 2
    carbs per serving 4g

    marinated tuna steaks

    ingredients:

    2 tbsp olive oil
    1/2 tsp ground cumin
    1/2 tsp ground coriander
    2tbsp lemon juice
    2 tbsp fresh chopped coriander
    salt and freshly ground black pepper
    2 tuna stakes about 125g (4 1/2oz) each

    method:

    1. mix together the oil, ground coriander and cumin, lemon juice and fresh coriander in a shallow dish.
    2. season and add the tuna, then spoon over the marinade, marinate in the fridge for about an hour.
    3. heat a griddle pan until very hot and and cook the tuna for about 2 minutes each side until cooked on the outside but still pink on the inside.
    4. heat the marinade through and spoon over the cooked fish before serving.

    Help for family dinners

    Hi,

    Just started CS yesterday, I need some ideas for family meals...I normally cook with chicken or beef...I can do rice,pasta,potatoes for OH and kids and salad for myself but need some ideas...my Oh has high cholesterol so need to watch out for him too...any ideas or even good sites to have a look at
