    Sweet potato and lentil curry

This is one of my favourite low fat recipes. It's cheap, easy to make and tastes gorgeous

    Sweet potato and lentil curry

    2oz onions
    4oz carrots
    2oz mixed peppers
    2.5 oz red lentils
    6oz sweet potato
    1tsp curry powder
    1tbsp olive oil
    400g tinned tomatoes
    1/2 pint water

    1. Fry onions, carrots, potatoes and peppers.

    2. Add curry powder.

    3. Add tomatoes, lentils and water

    4. Simmer on hob until vegetables are soft

Sounds very nice, will swap the olive oil for frylite for my SW plan. Thanks for the recipe.
