- You could mash together carrots and parsnip or turnip as an alternative to mashed potato. Just add pepper and salt to taste.
- Vegetable Curry - with loads of carrota, peas, brocolli, cabbage and a few potatoes is really filling!
What I like, and they're everywhere at the moment are courgettes. Try griddling slices brushed with the tiniest bit of garlicky olive oil, then sprinkle on a tiny bit of low fat feta cheese. Lovely with pasta, or potato and grilled meat.
Another good side dish at this time of year is ratatouille. I love griddled aubergines too.
Another good summer one is put cherry toms, blanched green beans, black olives and anchovies on a roasting tin and bake. The anchovy filets melt but you can leave them out if you don't like them. Hope these ideas help.
