stuffed mushrooms

gillybeans

want to be me again ...
Just checked out the sins for very light philadelphia as i love it in mushrooms and its 1.5 sins per 28grms green or red day so heres my fave recipe ..you may already do it anyway
mix 28 grms very light philly with garlic and herbs and fine chopped spring onion
take out stalks and replace with mix ..on oven tray season and cook for 15 mins ..they are to die for mmmmm
great as a starter nestled in some rocket ...

Gilly, I am on WW but that sounds heavenly. - the extra light philly on WW is about 0.5 pts per 25g or so, so that would make a really tasty low point snack.

off to get me some big mushrooms and some spring onions!

Hi Gillybeans, you could make a syn free one by using Eat Heavenly smooth cottage cheese with garlic and herbs, you can get it in Tescos, i love it and nice on Jacket potatoes too. xxx Loobylou

I might try these tonight! Thanks!

ETA: 85g of low fat soft cheese is a HEX B so that's another syn free alternative. Also, on green you can have 42g feta as HEX A - that might be nice too!

I am reminded of the famous Shirley Conran quotation: 'Life is too short to stuff a mushroom.'

However, if someone else has done it ... yummy!

Oh I might try that! Hmmmmm Loooby I still have never found that smooth cottage cheese :/

here's another version to try ...

TOTALLY STUFFED MUSHROOMS

I've tried to copy a dish from the harvester's menu, which is what i order whenever i go there, and it tastes VERY similar to their version - yay!

sins = free on both days(if using cheese as h.extra)
serves = 1

ingrediants
2 pack of large mushrooms
half a leek
half a small onion
3 light laughin cow triangles*
small pinch of low fat cheese*

*count as one healthy extra 'a' choice

1. turn oven on, remove stalks from mushrooms and lay on a baking tray open side up.
2. finely chop the leek and blanch in pan of boiling water for a few minutes.
3. finely chop the onion and mushroom stalks and fry in frylight until softened.
4. drain the leeks and add to the onion.
5. add the 3 cheese traingles and stir over a low heat so the cheese melts.
6. fill the mushrooms with the mixture and put in the oven for around 10 minutes.
7. top the mushrooms with the grated cheese and leave a few more minutes for the cheese to melt.

they're VERY tasty and i serve mine with a jacket potato, peas and some bbq sauce, but you can have it with anything as it's free on both days. they would probably be lovely with a steak!

It'll be totally free if you use Quark ;-)

I don't like quark on it's own, but I use it LOADS in recipes.
Mind you, there's loads of free foods that I couldn't stand before starting SW....funny how you can develop a taste for things ;-)

thanks looby x

Yes Gillybeans, its really thick and creamy, you could tip the tub upside down and its stays inside, i can't resist going back to fridge for a spoonfull.
Will have to see how it cooks though, i might try it when iv'e bought some more. xxx

They sell the smooth creamy cottage cheese by Eat Honestly in Waitrose and it is on special offer at the mo for 67p a tub

hth xx

are there any tips with cooking quark?

yeah - DON'T! lol

have tried making fake sauces with it and have come to the point where i'd rather use sins on sauce instead.

I keep reading about folk not getting on with quark, and recipes not working. Not sure why, coz I've never had any bother with it!? lol
