Speedy mushy peas

Ha, ha, no idea, I may not sleep now I need to know!!!!
 
Do you think it's because the mushy peas have been broken down already, yet peas have to be chewed saliva starts the breaking down process etc - do the mushy peas are a head of the peas at mouth entrance - lol I honestly don't know but here's one theory :)
 
A good question! I think it might be because mushy peas are made from marrowfat peas, which are left to mature whereas garden peas are not marrowfat and are picked when they're still young. I would guess different types are more fibrous and/or become more so as they age? I grow peas and I've noticed that the taste and texture of young peas straight from the pod is very different to those that come out of a pod I've missed and has become a bit yellow with age.
