On the weightwatchers food site, there is a recipe for "victoria sponge cupcakes" for 3pp I think (im on SW so didn't pay attention to the points!)... I made them without the jam & cream and it is gorgeous cake mixture. Google for the weightwatchers food site, sorry I don't have the link, I'm on the mobile app just now, but I'm a geek & saved the recipe on my phone haha...
Recipe -
100g stork
100g caster sugar
100g SR flour
2 eggs
1 tsp vanilla extract
12 tsp strawberry jam
12 tsp reduced fat thick cream or similar
Preheat oven to 180c
Line 12 hole tin with paper cases
Beat spread & sugar til light and fluffy
Beat in eggs & vanilla
Fold in flour
Put in tin and bake for 12-15 mins
Cool for 5 mins then put on wire rack
To serve, cut off tops, add a tsp each of jam & cream
Put tops back on
Dust in icing sugar
