I found this recipe on a fitness blog and wondered what everyone thought?
Egg Muffins with Salmon (plus Broccoli for PV) - makes 8
8 Eggs
(1 or 2 Broccoli)
3 pieces of smokes salmon
Salt/Pepper/Herbs
Spray a muffin tin with oil (and wipe out with tissue)
Crack an egg into each section
Chop Broccoli and Salmon up finely, add bits to each muffin.
Bake in the oven for 15mins at 200 degrees C.
Can be eaten hot or cold.
Do we think this would work with muffin cases rather than a tin? I don't own a tin that's all...
