Serves 4
225g mush
2 crushed garlic cloves
450g ex lean mince
400g can of chopped toms
250ml passata
Salt & pepper
16 dried cannelloni tubes
300g fat free cottage cheese
250g tub of quark
2 large egg yolks
Fresh chives chopped
60g cheddar cheese (reduced fat)
1, in a deep, lidded non stick pan cook the mushrooms & garlic covered for 10mins. Add the beef and continue to cook uncovered for 10mins.
2, add tomatoes & passata, cook for 5 mins. Season & leave to cool.
3, preheat oven too 200oc/gas 6/390of. Spoon the mince mixture into tubes & place in a large baking dish. Brush the pasta with water.
4, for the topping mix the quark, cottage cheese, egg yolks, chives & 1/2 the cheese. Season. Spread the mixture over the cannelloni and sprinkle with the remaining cheese. Bake in the oven for 45mins.
