I have a lovely recipe for watercress soup:
2 bags of watercress
1 bag if fresh spinage
1 litre Chicken stock made with chicken bovril
1 clove of garlic
1 chilli (I use scotch bonnet, but use a milder one if you want)
1 green pepper
a generous handful of fresh corriander
Blitz all ingredients together in a blender or food processor, put in a pan and simmer for 10-15 minutes.
It tastes absolutely lovely!
