I have just cooked this recipe based on a Come Dine with Me recipe, and it is absolutely gorgeous! I only made it for two incase it wasnt nice, so u will need to double up I presume for more!
Ingredients:
2 large red peppers
2 small red onions
2 small tomatoes
1/4 tsp thyme
1/2 tsp lazy garlic
1 tsp lazy chilli (I used a tbsp which made it very spicy!)
pinch of salt and black pepper
350ml ish of veg stock
Method:
Slice peppers and pop into oven tray. Quarter toms and onions, throw them in. Add garlic, chilli, thyme and s&p, and spray with spray light. I use olive oil version.
Roast on high heat til peppers charcoaled.
Remove peppers from tray and remove skin (bit of a drag, not sure if u have to do it) and add to a pan. Skin toms and throw them in too. Put tray on low heat and add half of stock to remove sediment off the bottom, and add all contents to pan. Heat up and add all to blender and whizz!
I then sieved the mix back into pan, and heated up! Add s&p to taste.
Eating it now, absolutely fab and very spicy! Also helps towards my veg intake, and is a super speedy food! :gimi:
