Got this one off my leader last week is very nice.
Butternut Squash, Ginger and Apple Soup (opp)
1 Medium onion, chopped
1 Medium Apple, chopped
1 Small Carrot, chopped
450g Butternut Squash deseeded and chopped
2 tsp Ginger
2 Veg Stock cubes made up with 850mls hot water
1/4 tsp nutmeg
pinch salt/pepper
Saute onion, apple, carrot in large saucepan for 3-4 mins until softenened.
Add ginger and stir well
Add butternut squash and stock in saucepan
Bring to boil ans immer gently for 20 mins
Transfer soup to blender and bledn for 15 sec
return to saucepan, reheat and add allspice or nutmeg
Salt and pepper to taste
