Put 500ml semi skimmed milk in a pan (from HEX A or syn accordingly) along with 3 tbsp granulated sweetener. Sprinkle on a sachet of gelatine. Heat until just before boiling. Stir well and add 1tsp vanilla extract and 2 egg yolks (not usual for panna cotta but I did this to try give some creaminess) pour into 4 individual dishes and chill for at least a couple of hours, ideally overnight. Serve with fruit of your choice - syn accordingly. The fruit I used is from a bag of frozen red berries, defrosted and then blitzed in the microwave for a minute to release some of the juices. Add sweetener to taste and serve on the panna cotta.
Tip - if the panna cotta is difficult to remove from the mould, briefly dip the base of the mould in hot water. It should then release easily.
