    Smile Egg white omelette

I'm intrigued by the egg white omelette which I see appearing in diaries every now and again.
    Does anyone have a recipe?
Is it just egg white whisked until meringue like and then fried?
Please put me out my misery!!

Just make it the way you would a normal omelette but only with the egg white, whisk it to mix it, add milk etc and put in the pan

I tried this last week and it was an inedible disaster! As soon as it hit the pan it just burned rather than cooked! I dunno if I maybe put too much milk in?

The pan wasn't all that hot either 'cause I was thinking that may be the cause.

I tried this tonight and it was lovely. I fried my veg in fry light until soft ish then whisked up 4 egg whites and mixed herbs NO MILK and poured it over the veggies and cooked for a few minutes, took it off the heat and then placed the pan under the grill to brown the top and I have to say was well impressed. 0 point omelette only had half as had other veggies too but my tummy is still full after 2 hours. X

I never use milk in my omelettes, I don't whisk the egg too much either - just a quick swirl to mix in salt and pepper is all it needs, any more than that and the omelette becomes weak and you'll end up with scrambled eggs (or at least I always did!)
