    Fry Light
    1 small onion, finely chopped
    2 cloves garlic, finely chopped
1 small red chilli, finely chopped
100 g chopped frozen spinach, thawed
    400 g can cannellini beans
50 g wholemeal breadcrumbs - This is a Syn Free Recipe if you use this as your Healthy Extra B, if not, it's approx 6 syns I think.
    1 tsp ground cumin
    1 tbsp coriander, chopped
    salt and black pepper

    Method
    1. Heat the fry light in a small saucepan and cook the onion, garlic and chilli for 5 minutes until softened. Squeeze the excess moisture out of the spinach and place in a large bowl.

    2. Mash the beans well and mix with the spinach, breadcrumbs, cumin and coriander. Add the fried onion mixture and stir well together.

    3. Season to taste and shape into four round burgers. Grill or shallow fry for a few minutes on each side until crisp and golden.

These sound gorgeous - I am going to try! But I have another syn free suggestion as a substitute for the breadcrumbs which I have used on potato croquets before - couscous! I think I will experiment tonight and leave out the breadcrumbs and roll the burgers in couscous instead for a breadcrumb type coating.....
    love,
    Pinkydoodles.

It doesn't matter if you fall down sometimes - what matters is that you get back up and carry on!!!

Doesn't the couscous turn into a syn if not cooked the way it is meant? I've no idea, I don't understand it, as far as I know, it goes down the same hole. Lol

Let us know what its like x
