Food fit for a King...or a Princess! :-)

My tea last night:

I layered green beans in the bottom of a bowl. Filled up with Quorn and chunky vegetable chilli, and then topped with a tbsp FF natural yogurt and some fresh chives.

To make the chilli I simply fried off a load of roughly chopped mushrooms, red onion, red and yellow pepper and Quorn mince with some garlic and chilli. Added 1 tin of chopped tomatoes, 1 tin of Heinz 5 beans and about 3 tbsp chilli powder (I like my chilli HOT!!) Just mix it all up well and allow to simmer for about 10 minutes. This made loads - I've frozen what was left so I can just pull it out of the freezer and microwave when I'm in need of something quick and easy! :)
 
Wow, I haven't posted in here for an age!! Will try and update with some recent photos and recipes when I get home tonight :)
 
As promised, here are a few of my more recent eats...

Syn-free Egg Fried Rice:

I made up some Batchelors golden savoury rice as directed, and while that was boiling I fried off some mushrooms, peppers and red onions. Once cooked, I added the rice to the frying pan with 2 eggs and a splash of soy sauce, then stirred until the egg was cooked. Delicious!

Gammon with a Fried Egg, Chips, Roasted Vegetables and Baked Beans:

Pretty self explanatory!

Bacon Stir Fry:

Again, pretty self explanatory. Made the 'sauce' just with soy sauce, garlic and chilli.

BabyBel burgers:

For the burgers I combined extra lea mince, a chopped red onion and some soy sauce. I placed a handful into my burger press, then a BabyBel in the middle, and finally more of the mince mixture. Used the burger press to pop out a perfectly round and even burger! Just cooked in the oven for about 15 minutes and had it topped with slices tomatoes and jalapeños. Also served with carrot 'chips'

I fried off mushrooms and onions and added Quorn mince, a Knorr beef stock pot (made up with water) and some frozen peas. I let it simmer until the whole thing was cooked trough, then placed in an ovenproof dish and topped with mashed potato and cheese. Then served with lots of lovely veggies.

Corned Beef Hotpot:

This is one of my favourites, and so easy to make! I just peeled and sliced an onion and a few potatoes and chopped 100g Princes lean corned beef (2 Syns) into little pieces. Then all I did was later it in an oven proof dish and then pour over a Knorr beef stock pot made up with boiling water. Pop it in the oven for about 40 minutes until the potatoes underneath are cooked through and the top has started to crisper up. Served with loads of superfree veggies.

Yup, I sure do. Sweetcorn is also the same.

With the corned beef hotpot (EE day) I had plenty of other superfree - carrots, cauliflower, broccoli and green beans.

The shepherds pie was on a green day (made with Quorn), so the 1/3 superfree isn't quite as crucial as it is on EE. Although the pie did also contain mushrooms, onion and by the looks of the photo I had it with carrots and broccoli. So still plenty of superfree.

I just like peas lol!
 
Pizza and Chips:

The pizza base is one of the BFree multigrain wheat and gluten free wraps (HExB) spread with tomato purée. I added chicken, 3 slices chorizo (3.5 Syns), mushrooms, peppers, red onions, jalapeños and cheese (HExA) and baked in the oven for about 15-20 minutes.

The chips are potato and sweet potato wedges. I sprinkle with garlic granules and some chilli flakes before baking in the oven for about 30-40 minutes, turning half way through.

Epic!!!
