Just made these and they where delish.
5 Eggs
7 Tablespoons Sweetner
Lemon essence
3 Lemons
2 Ounce Sr flour
1 ounce icing sugar
Mix whisk or blend eggs Sweetner and a few drops of lemon essence. Mix for about 10 mins and eggs mixture has trippled in size. Add flour and juice of 3 lemons plus rind of 1 lemon if wanted.
Pour into 12 cupcake cases.
Bake at 200" for around 12 mins.
Make up icing sugar with lemon essence.
12 Cupcakes at 1.3 syns each. Amazingly yummy. You could also make 6 double ones with syn free lemon curd middle xx
