Ive been a SW member bot 3 months now and I am getting BORED! I popped onto the Recipes with minimal ingredients thread and made a few of them this week which spiced up my meals abit. I also get a bit more creative now too Throwing stuff in a pan and having it with a baked potato or noodles
I like to go to Asda and get the frozen packed stuff so I will buy a frozen pack of the stir fry mix and a pack of the chicken throw in a pan with soy sauce and I have a quick simple stir fry!
A couple of recipes I really enjoy and are quick and simple.
Sticky chicken is yummy! Basically 3 tbsp Honey, 3 tbsp soy sauce and 3 tbsp of Balsamic vinegar. Chop chicken into 1cm cubes put all in a tub over night to marinate and fry until stick serve with noodles, egg fried rice etc.
Aldi do Salmon in Chilli in the chilled section. (Think it is called fusions) and thats lovely with noodles, stir fry, chips etc.
I found that some of the rubs (Jamie Oliver BBQ is my fave so far) are about half a syn each and really make a meal something special. Wrapping fish portions in tin foil with herbs and chillis makes a yummy dish. Pasta with passata and veggies is a quick simple and filling meal too.
Lunches I will have homemade soup. As easy as popping to Asda or Tesco and picking up a pre packed mix shove in a pan with a veg stock and blend. Plenty for a few days so pot it up and freeze.
Hope maybe some of this will help. I totally get what you are saying. Forst 3 weeks I was living on eggs and mullers so much so that I just cannot stomach them anymore.
