My Mum's Danish Meatballs

1 lb pork mince (Cheap and fatty is better)
1 knob of Butter
1 dash Worcester Sauce
1 small onion
pepper and salt to taste
1 cup bread crumbs (not induction friendly, you could leave these out)
2 bay leaves
2 eggs
Anchovies (Optional)
2 teaspoons Dill herbs

Method

Chop half the onion finely, cut the remaining half it 4 chunks.
Mix all the ingredients together until they resemble a fine paste
Form into small balls with an anchovy in the middle of each ball.

Fill a deep pan with just enough water to cover the meat balls

Put the remaining onion and bay leaves in the pan.

Bring the pan to the boil and then insert the meat balls

Simmer for about 10 minutes or less depending on the size of the meat balls.

Just thought I would share my delicious prawn & spinach curry recipe with you. I adapted it from Jums original curry recipe.

1 onion
mushrooms
4 cloves of garlic
ginger (I used ground ginger - about 1/4 teaspoon)
teaspoon of cumin seeds
1 green chilli
2 fresh tomato chopped
prawns
spinach
1/2 teaspoon garam masala
coriander
double cream 2 tablespoons
grated cheese (sprinkle)

fry the onions in extra virgin olive oil, add garlic, ginger, cumin seeds, mushrooms & chillis finely chopped. Add tomatoes and heat through. add prawns & spinach (I used frozen) and just enough water to cover it.
Simmer for 20 mins then rapid boil to thicken. When its at the right consistency for you add the garam masala and double cream. When the cream has warmed through I added a little grated cheese until it melted.

Enjoy its delicious!

I've just made the muffins in a minute and they were absolutely gorgeous, and much needed! I have been craving toast and this has sorted me right out. I am thinking of adding garlic salt to recipe to make garlic bread to dip in casseroles and stuff and plan on having eggs with real soldiers for lunch!

Will have to try those Rela - I got some 0 carb maple syrup from the low carb megastore and I want something to pour it on!
 
Just made an omelette (well if you can call it that!!) with matessons smoky sausage chopped. crisped the sausage up first with a bit of paprika and chilli poweder. Added it to omelette, then sprinkled some cheese on it.

It tasted fab...and I would show you a pic of it if it had come out round! lol xx

I had an omelette for lunch as well, doesn't sound half as nice as your's love. :)
 
Curry. I use this with all meats, not just chicken

This works really well.
Finely chop half an onion and fry in extra virgin olive oil until brown.
Add salt to taste
Add 4 cloves of garlic and about inch root ginger finely chopped.
Add about teasp of cumin seeds
Add 2-3 green chillies finely chopped (add more or less to get the right heat!)
Chop two fresh tomatoes and add and fry untill cooked.
Add 1lb cubed raw chicken breast and fry until cooked.
Now add just enough water to cover and simmer for 20 mins.
Then uncover and reduce liquid (boil rapidly) until it is the consistency you like.
Add half a teasp of garam masala
sprinkle with a generous ammount of fresh corriander
 
OK here is another

Chicken Paprikash

2 tbsp Paprika
8 Boneless Chicken thighs without skin
2 tbsp Butter or Olive Oil
1 large onion, Chopped fine
2 celery stalks, Chopped fine.
½ cup good quality chicken stock
Salt and Pepper to taste

This can be made in a slow cooker or crock pot. You throw everything in it and leave it to cook for about 4 hours or until the chicken falls apart. I have even used frozen chicken thighs with good results.

Stirs a few times to evenly distribute everything, and shred the meat. If mixture is too watery reduce it down a bit by frying the mixture in a pan for a few minutes. It should be moist but not watery. Taste and add salt and pepper as needed.
 
Mmm Jim, that paprikash sounds delish! Will be trying that' I've never used a slow cooker before - would you recommend them when low carbing?? A x
 
Sure, why not, cooking is cooking isn't it Anna. :) You could crockpot it as well.
 
The chicken Paprikash is in my slow cooker as we speak.
Can't wait to get home and eat it later.

Lamb Pasanda recipe for those that like creamy curries

Lamb Pasanda Ingredients
1 1/2 oz Ghee or unsalted butter
6 oz onions peeled and chopped
1lb lean lamb cubed
2 cloves of garlic
1 inch piece of ginger grated
150ml natural yoghurt
½ tsp turmeric
2 tsp coriander
1 tsp cumin
½ tsp ground nutmeg
1 large pinch cayenne
200ml water
150 ml single cream
1oz ground almonds
½ tsp salt
1 tsp garam masala
Toasted blanched almonds

Instructions for Lamb Pasanda
Melt the butter in a large frying pan and fry the onions until just beginning to brown. Add the lamb and cook until browned. Add the garlic, ginger, yoghurt, Turmeric, Coriander, Cumin, Nutmeg, Cayenne Pepper and water and bring to the boil. Cover and simmer for 30 minutes or until the meat is tender. Stir in the cream, almonds, salt and Garam Masala. Heat through gently and serve garnished with the toasted almonds.

Meat Loaf.

1. Ingredients.
1lb cheap fatty mince beef.
2 medium Onions.
2 Eggs
Fresh Parsley.
Worcester & Ketchup
Loaf Tin

2. Preparation and Cooking.

Finely chop the Onions.
Ditto the parsley.
place into mixing vessel.
Add Eggs
Squeeze of Ketchup
Couple shakes Worcester
season with salt and pepper to taste.
Mix thoroughly.

Place into loaf tin. Cover with baking foil.
Remove foil when 5 minutes left.

Cook for 1 hour at 180.

Remove from Oven.

There should be load of lovely liquid from this. I usually pour it into a pan and reduce it a bit and use it as the gravy.

Turn out onto a serving plate and there you go.
