So I have been camping for the last week. I had a blast! We were out of signal though, so was unable to keep a food diary... And I may have failed to keep a hand written one! Never mind, I will be back to usual service asap :)
 
Right, here we go with getting back on track. My camping excursion was a minor disaster for the weight loss, mostly because we found a fantastic little cake shop in Hawkshead, Cumbria, that did the most amazing food and, obviously, cakes. This has meant that over the last week, I have put on 3lb's! This has got to go, along with an additional 2lb, making my new weight target 80lb. Wish me luck! I will be doing more exercise from now on - I am aiming for 45 mins, 4 times a week. This normally consists of walking to work, an aeorbic dvd (ministry of sound), additional walks, sometimes a gym visit (we are very lucky to have a gym in our building).

I knew (once again) this would be a bad day. We went to a lovely sunday lunch at a local pub and indulged. I felt I did quite well though - I didn't have a starter as well, and stuck to just one glass of wine while there. All in all, it could have been a lot worse. Roll on tomorrow when I restart SW with a vengence!

Today is my last day at my current job. I am enjoying it, and will also enjoy leaving to concentrate on my studies. However, I have be bought a chocolate cake and baklawa for a leaving present!! Will have to restrain myself when it's opened...

Sure, no worries:

Chicken and bacon soup -

1 onion, peeled and finely chopped
2 carrots, peeled and grated
2 lean back bacon rashers, all visible fat removed, finely chopped
2 large skinless and boneless chicken breasts, cut into thin strips
600g canned chopped tomatoes
400ml chicken stock
1 tbsp chopped rosemary
finely grated zest and juice of 1 lemon
salt and freshly ground black pepper
chopped fresh flat-leaf parsley, to garnish

Method
1. Place the onion, carrots and bacon in a large non-stick saucepan and stir-fry for 2-3 minutes.
2. Add the chicken, tomatoes, stock, rosemary and lemon zest and juice. Bring to the boil, stir, then cover and simmer on a medium heat for 15 minutes, stirring occasionally. Season to taste and serve sprinkled with chopped parsley.

Serves: 4
