That would certainly put me off using ginger for a while!

Try a bit of Mixed Spice, that is nice.

If anyone doesn't have any but already have spices in their cupboard, mixed spice consists of Cinammon, Coriander Seed, Caraway, Nutmeg, Ginger!!!! (sorry Dgirl) and Cloves.

Do you use milk or yoghurt?

The one in the photo was made using yoghurt, the ones I made with milk were more delicate and didn't hold together as well.

I make my own yoghurt in the slow cooker using low fat uht milk (semi skimmed 1.6% fat although I know I should use skimmed but I like thick yoghurt!).

I used to buy the Lite Greek Style from Tesco but I know a lot of people use Total yoghurt but it is expensive.

If you cook it for 1 min on both sides it will be very crunchy.

Just keep an eye on it though if doing that as there is a chance it may burn, depending on the strength of your microwave.

Surprising how much they hold together when dunked in a cuppa when they are crunchier.

I think most of the recipes use butter and brown sugar like this one:

I made these tonight.... they were fab. I made 5 in 2 batches - the first three were more like the galette, the last two were crunchy like biscuits - think I made them a bit thinner. Thanks. Was thinking I might make a big batch to take camping next weekend....Does anyone know if they keep ok for a couple of days?
