Hello everyone,
I'm Lauren. Here's a bit about me...

I started Slimming World in May 2011. I was going on holiday to the US of A in September and wanted to lose some timber before gorging myself on awesome food for 2 weeks. I steadily lost 2 and half stone in just over 4 months and I was loving it. I went to America and ate my way through many a chicken wing and rib.

Thankfully, because I did so much sightseeing and walking around, I didn't put on any weight and managed to STS throughout the whole holiday! I was mega chuffed :bunnydance:

Then I got a bit lazy and stopped going to class and started concentrating on xmas and more amazing food. Needless to stay I enjoyed the next few months (mmm cheese boards), but I wasn't silly about it.

Before America I was 11 stone 12. Now I'm 12 stone, so I've put on 2lbs, which I'm OK with! But I'd like to lose a bit more weight for some more holidays this year, and maybe reach that elusive 'healthy BMI' weight, which for me I think is about 11 stone :)

So I know that doing a food diary will help me to stick with SW again, and maybe I'll find my willpower again and put it to some good use.

I love my food, but I love achieving something too so keep your fingers crossed for me and a few words of encouragement along the way would be awesome.

It all starts tomorrow....

Well this morning could have started a bit better for my first day back on SW! I have caught the man flu from my boyfriend and I am not feeling brilliant. :cry:

But... I have made a tasty lunch to combat it and I won't let it defeat me and draw me over to the food table at work, which is currently displaying a variety of crisps and chocolates :(

So the food plan for today is:

Breakfast: Fat Free yoghurt and a summer fruits Alpen bar (HE)

Luncheons: roast chicken from last night's tea, salad, a jacket potato and 2 x laughing cow EL cheese (HE). I'll probably have a smidge of ketchup too (1 syn). double choc Alpen bar for dessert (HE)

Tea: will be burgers made with EL mince, sweet potato wedges and salad. I'll definitely be having some light mayo with this too (3 syns ish) and might have the rest of my allowance of cheese too (HE)

I've got a bag of velvet crunch crisps at work in case I fancy them, and a 2 finger kitkat for a sweet treat, so they might get added to my syn total by the end of the day...

You've done so awesome so far, you'll definitely be able to do it! We'll just have to have lots of SW tea's together and keep eachother motivated :) xxx
 
So, my first day back on SW has been successful, I have managed to stay away from most treats and am feeling good :)

Breakfast was a fat free yog and alpen bar
Luncheons was chicken salad, a potato, 2 LC light triangles (HE) and I had a bag of Velvet Crunch crisps (4.5 syns). Alpen bar for a dessert (HE)
Tea was homemade burgers, sweet potato wedges and salad (photo below - yum!)

Syns - smidge of ketchup (1), crisps (4.5), light mayo (3) = 8.5

Drinks were water and diet pepsi.

Mmm, them sweet potato wedges look yummy. I've only ever tried sweet potato once - baked. It was nice. How do you do your wedges?
 
Thanks! I think I'm addicted to sweet potato at the moment.

I slice em into wedge shapes, put rock salt and smoked paprika on them, spray with fry light (but not loads otherwise they can go a bit soggy) and bung them in the oven quite high (on about 200) for about 45 mins. They come out crispy and a bit mushy, I absolutely love them.

I've never tried baking them. Is it like a jacket potato?

My cousin always bakes butternut squash in the oven, and that's nice too. Might have to start doing that myself!

They sound yummy. Yeah I just baked it like a jacket potato. It was nice, but a bit strange the soft texture when I wasn't sure what the expect and wasn't really sure what to have with it, never having had it before! Might pick a couple up at the weekend and try the wedges.

Butternut squash is my new favourite veg. I'd never even tried it before SW but now I have it at least every other day!

Today has been good thanks, but was supposed to go to Zumba tonight after missing it for about 3 weeks and still failed to motivate myself to go. It's just so cold and rainy outside and all I want to do is snuggle up on the couch!
 
I think I'm always put off by the fact I don't seem to have enough upper body strength to slice butternut squash haha! It's hefty! Going to have to try it a bit more though, I think it's good to mix it up and not always have potatoes as my stodge.

Glad you've had a good day. I know what you mean about the motivation to exercise. The weather is too poo at the moment to do anything, nice just to stay in and watch tellybox.

I'm on a training course in Leeds tomorrow and lunch is provided.... I'm hoping for something slightly healthy but I'm guessing it'll probably be 'beige' (pastries, sausage rolls, crisps etc) oh well... this is the true test of my willpower :rolleyes:

Mmmm those wedges look gorgeous!!! Not had sweet potato for ages, I absolutely love roasted butternut squash! I could quite happily eat it every day :)

Definitely. The back of the knife dug into the palm of my hand and left a mark earlier as I was pressing so hard to try and get it through! :rolleyes:

Good luck with the provided lunch. I'd be tempted to take something with me just in case!
 
I may be tempted to buy pre cut butternut squash... do they do that?!

Well today wasn't too bad...

I had an Alpen Bar, a banana and an apple for my breakfast.

When I got the training venue I had a hot choc and a little biscuit thing (oops!) but I really fancied it and they were just laid out there... it would have been rude not too.

Lunch was amazing, one of the best buffets I've seen in a while haha! I had...

2 little triangle tuna salad sandwiches on wholemeal bread
half a white sandwich bun with cheese and onion in it
1 cube piece of chicken (it was a bit weird so I didn't go back for more!)
3 scampi dipper things,
and some cucumber, tomatoes and lettuce and a 2 cubes of cheddar cheese.

I managed to stay away from the cake plate and ate 2 fruit kebabs with strawberries, pineapple, melon, plum and grapes. They were very nice and I felt smug about not eating the amazing looking carrot cake that was just calling to me.

To be fair I've probably eaten my syn allowance and more just from the buffet but it could have been a hell of a lot worse. I hope I'm not just kidding myself!!

Tea tonight is sweet chilli chicken stir fry (onions, peppers, water chestnut, mushrooms, sweetcorn, noodles, chicken, sweet chilli sauce, soy sauce) so I suppose that is a fairly good tea.

I'll try harder tomorrow :):)

Well don't on resisting the sweet stuff and being sensible with the rest. It's so hard when you're faced with all that yummy stuff!

So tea tonight was sweet chilli chicken stir fry. I raided the fridge and freezer and realised we didn't have what I thought we had in. So it was a strange concoction of noodles, green beans, the remnants of a stir fry mixed veg pack, carrot, onion and pineapple (pic below)

Pineapple really made it taste nice, I'd definitely recommend. And a bit of the pineapple juice helped to make it a bit wetter as I didn't use loads of sweet chilli sauce (mainly because we'd nearly ran out!!)

The noodles I used were Chef Huo ones. They sell them in Home Bargains and they come in squishy packs. You just add them to your wok at the end of your stir fry and they kinda steam through. Way easier than dried ones and cheap too!

Just settling down to watch the Brits... and am tempted to eat a Skinny Cow chocolate ice lolly. Let's face it, it's probably going to happen....

The Skinny Cow ice cream was demolished by about 8:05 and it was delicious. YUM!

I'm going to my Mum n Dad's for tea tonight so god knows what they will cook up. They are normally quite good when I'm trying to be good so I am expecting one of 3 things.... spag bol, meat and veg dinner or fahitas. It's always one of those 3! Secretly hoping for fahitas as I love them.

So meal plan today is:

Breakfast : Fat Free yog, apple and a banana
Luncheons: Ham salad and leftover sweet potato wedges. I will probably have a tbsp of salad cream (2 syns) with it too.
Tea: Who knows? By not eating many syns during the day, if it's a bad tea then I won't feel as guilty.

I have a bag of velvet crunch crisps as well which I may eat. We'll see..
