Snacks: Blueberries, raspberries, cherries, apple, fat free yoghurt

looking fab - how do you make the salsa Erms? xxxx


Mango salsa recipe:
Serves 4

320g mango chunks, diced
1 large red pepper, deseeded and diced
bunch of spring onions, finely chopped
1 red chilli, chopped

Mix everything together, add some seasoning and marinade in the fridge til you're ready.

Ha ha :D I think thats part of why Im sticking to it at the minute, I have the time to plan and cook. I love cooking and I love photography, although these are only snaps on the compact really as my DSLR has died :( So it's kind of a creative project as well as a healthy eating plan. I dont know whats going to happen in September when I go back to uni :confused: :cry: I hope I can keep it up.
 
Mmm yumm. Your food looks delish. I love the look of the curries and have bookmarked them. So you buy is it lime pickle? and use that in your curries? I love the look of the kebabs and must try and find that harrissa paste stuff. For the jerk - do you just use jerk seasoning or paste? x

I like Patak's mixed pickle best as I'm addicted to the karonda in it (the green pea-shaped thing) but you can use any. Harissa paste is free, I use Al'Fez but Bart's do one, Belazu do one, there's a Sainsbury's own version as well, I've got one but havent tried it yet. Or you can also make your own if you dig out a recipe.

The jerk I make my own:

Ingredients:

2 onions, finely chopped
2 tsp chilli paste
2 cloves garlic, crushed
2 tsp fresh ginger, grated
2 tsp dried thyme
1 tsp ground allspice
1 tsp ground cinnamon
1⁄2 tsp ground nutmeg
Juice 1 orange
Grated zest and juice 1 lime
2 tsp Hot Pepper Sauce
2 tsp brown sugar
Salt & pepper

Method:
Fry onions gently in Fry Light for 10 min until soft
Add chilli paste, garlic, ginger, thyme, all spice, cinnamon, nutmeg and fry for 2 min
Add orange juice, lime zest and juice, hot pepper sauce and sugar
Simmer to a dark paste, season and leave to cool
