MY SYN FREE SCOTCH EGGS

ok so we have a butcher that comes to our sw meetings and he is sw approved and sells syn free sausages mince burgers etc....

so i had to have a go at making scotch eggs and OMG these are SOOOOOOOOO damn tasty.

1 pack of syn free sausages (you could make them with weight watchers low syn sausages or the low syn sainsburys ones BUT REMEMBER TO SYN THE SAUSAGE)
4 eggs (boiled for 4 min)
1 egg lightly beaten
dried smash
paprika, pepper and cumin

so my how too.....

peel the boiled eggs and set to one side

de skin the sausages and divide the sausage meat by 4

flatten a quarter of the sausage meat between cling film and wrap the egg up

mix 4 heaped tbsp ish dried smash with paprika, pepper and cumin

roll the scotch egg in smash mixture, dip in beaten egg, then roll again in the smash mix

repeat with the other eggs then place on a baking tray and spray liberally with frylite

bake in a hot oven for about 20 min

ok so for those of you that cant get syn free sausages
(weight watchers
Premium Pork Sausages, 8 pack, chilled, 50g each)
(
Be Good to Yourself Extra Lean Pork Cumberland Sausages, 8 pack, chilled, 57g each)

are both 1/2 a syn each on ee and red and so it will be 1 syn a scotch egg

STILL NOT BAD

i dont think considering a standard large scotch egg is 13.5 syns

ok so ive had a MAHOOSIVE blip today:cry:

i was good when i ordered my mains but thanks to hayfever lack of sleep (thanks to my 2 yr old) a migrane and * week i caved and got a very very BAD pudding

in fact it was 47 and a half syns of bad pudding but it tasted so good

i then proceeded to have a sneaky bag of crisps this aft and a piece of cake that my hubby had bought pfffft

but its ok as im getting myself back on track now

all my meals are prepped for the weekend and im making a big oven tray of oven roasted veg (HAVE YOU EVER MADE IT) its awesome to have with my teas all weekend

i put in
1x red pepper
1x green pepper
3x small- medium onions
2x courgettes
2 handfulls of cherry tomatoes
2x sweet potatoes
and 4 garlic cloves peeled and chopped in 2

ok so just rough chop the lot (leave quite chunky) and put in an oven dish

drizzle with balsamic, lea n perrins and season with salt and pepper (you can add herbs too if you want) then spray with frylite mix and bake in a hot oven til they are cooked and the peppers have a few charred bits

oh and i put 3 chillis on the top but left them whole so they can just roast and then i can pick them off as my son will not eat it if its too hot(he is only 2 after all)

six syn chocolate roulade

5 eggs (separated)
40 g reduced fat cocoa (6 syns) (other cocoa may be different syns)
5-6 heaped dessertspoons of sweetener (sucralose ones are best for cooking with)

whisk up the egg whites to stiff peaks
in another bowl whisk the cocoa with yolks and sweetener
carefully fold the choc mix into the egg whites (with a metal spoon)(helps keep air in)

bake in a lined roulade tin that’s been sprayed with frylite for around 20 min at 150 or until springy to touch

for the filling I mixed a tub of quark with a cherry 0% fat activea and sweetener spread it on and sprinkled defrosted frozen cherries on

IT TASTED LIKE BLACK FOREST GATEAUX

Or you can use different filling or substitute the cocoa for flour (don’t forget to syn it) and add vanilla essence for a vanilla sponge

I made a choc roulade and filled with coconut flavoured quark and chopped peaches the other day so many combinations

TATZIKI

Syn Free Tatziki


1 large 500g tub of total0% Greek yoghurt
1 cucumber
1 1/2-2 tsp dried dill
2-3 cloves of garlic pureed
juice of one lemon

peel cucumber and scrape out the seeds and discard the seeds grate cucumber into a sieve or colander and sprinkle with salt (leave in sink or over a bowl)

mix pureed garlic lemon juice and yoghurt in a bowl

squeeze water from grated cucumber and add to yoghurt mix and stir

add dill i keep adding until it looks pretty with green flecks through it but you can leave out if you don’t like it

i put it back into the yoghurt tub to store in fridge

it tastes better after a few hrs in fridge

nice with carrot sticks or on a jacket potato or with a kebab and salad the list is endless

you can even make it more or less garlicky to your taste

i also made a chuck it curry the other day with lots of leftover bits and bats

i made a lovely raita to go with it too

yog, dried mint, a dash of white wine vinegar and some tumeric to colour it mix well n hey presto syn free raita:p

Yum the oven roasted veg sounds fab !! You said a few posts back you were having seafood sauce ? Was this something you made yourself and if so whats the recipe. I love seafood sauce x

all it is is extra light mayo ketchup and lemon juice and a bit of cracked black pepper

i never buy it as always have ketchup n mayo in and it takes 2 min
